If you want to shift stubborn fat and keep it off, a high intake of vegetables is essential. Try this easy, versatile vegetable side dish. Add as many vegetables as you like, add some herbs and spices to make it even more inviting.. Seriously this is a win-win dish for many reasons.


Serves 6


2 Red Onions, quartered

5 zucchinis sliced 1 cm think

2 medium eggplants, sliced

250g button mushrooms

2 red capsicums sliced


1 tbls thyme chopped (you can use 2 tsp dried herbs)

2 tbls rosemary chopped ( you can use 2 tsp dried herbs)

1/2 tsp ground cumin

3 garlic cloves minced

2 tbls olive oil

2 tbls balsamic vinegar

salt & pepper

Preheat oven to 220 C. In a small mixing bowl combine marinade ingredients

whisk togeher.

Next pour marinade over the vegetables. Stir to ensure they are coated evenly.

Spray a roasting tray with cooking oil. Spread vegetables evenly on the baking tray.

Roast for 40 mins or until cooked.
