BLUEBERRY PANCAKES
The great thing about these pancakes is they’re easy to whip up, delicious and nutritious. I've .bumped up the protein content with the addition of Greek yogurt, you can also try some light ricotta. Yum!

INGREDIENTS:
(Serves 1)
1 Whole Egg
1/2 Cup of Egg whites
1/2 Banana, mashed
1 Tblsp Chickpea Flour (find in the supermarket and optional)
1/2 tsp Cinnamon
1/4 Cup Fresh or Frozen Blueberries
(Add 1/4 cup of Oats if you want to boost the Carbohydrate content)
METHOD:
Lightly spray a non-stick fry pan and heat.
Put all the ingredients into a blender or magic bullet (except blueberries)
and blend till combined. Fold in half the blueberries.
Pour all the batter into fry pan to make one big pancake or
1/4 cup at a time to make smaller pancakes.
Cook 1 - 2 mins per side and serve with leftover blueberries, banana and some Greek Yogurt.
